Pull the Knot Tight--Capt Toddy--Capt's Meatloaf

 Pull the Knot Tight—Captains Meat Loaf—the Captains Toddy


Ok lets get started—1 oz peach brandy—1 oz coconut rum—1 oz mint makers mark—2 tbs honey your favorite tea I like Earl Grey –been a little chilly.----The Captains Toddy!!

My favorite Knot is the double Hitch Knot I use it daily

Boats don't have ropes they have Lines----hold the end of line “A” in your right hand the rest of the line, line”B” in your left.

Lets secure the line to a deck fitting lets say a chain plate—Loop line “B” right to left around the object----loop it again below the first loop---so its wrapped twice around the object in this case a chain plate—line “B” should still be in your right hand and line “A” in your left hand with “B” crossing below “A” forming an “X”.

Poke the end of “B” down through the hole formed at the top of the “X”. Again “B” should be in your right hand.

Wrap “B” around “A” crossing first over the top, then underneath.

Bring the end up through the loop formed and pull the knot tight.-----Now that wasn't so bad was it?


Ok after all that work fix yourself another Capt' Toddy lets fix dinner

About 1 ½ lb of chopped beef I use 85% you can use leaner beef but you will have trouble with it drying out.

1/3 of a yellow onion chopped
¼ green pepper chopped
1 celery stock finely chopped
3-4 mushrooms diced
½ package of salteens crumbled
Capt s seasonings be generous
1 egg
1/3 cup BBQ sauce

Mix together I form into a loaf or put into a bread pan either Pyrex or a cast iron works well for this . Spread some BBQ sauce over the top about 1/3 cup. Pop into a oven preheated to 400 degree's a Coleman camp stove also works well leave for an hour. This is a great simple meal to quickly put together great for left overs and a sandwiches also.

Garlic mashed potatoes :

1 ½ -2lb of Russet Potato's peeled and diced
1 Tsp Kosher salt
1 cup half&half or milk to be less creamy for you bikers and joggers out there!
3 cloves garlic crushed or 2 tsp minced store bought garlic
3 oz grated Parmesan
½ tbs Italian seasonings

Peeled and diced potatoes into a large sauce pan add salt cover with water bring to a boil reduce to a rolling boil/simmer cook until potatoes fall apart when poked.

In a sauce pan add half&half garlic Italian seasonings bring to a simmer and set aside.

Drain and mash the potatoes add cream mixture and Parmesan cheese mix and combine let stand 5 minutes.


Any vegetables go well with this but green beans in mushroom gravy is a classic.

You can do the green beans from scratch but this is a simple nurturing meal we are throwing together in between Capt 's Toddies so:

1 can French Green beans drain ½ the fluid add 1 can mushroom soup some times I drain all the fluid add ½ can milk add some spices usually basil a couple of cranks black pepper bring to a boil.


Enjoy—this is a good reheat for a quick meal to Nuke when you come home from a hard day in the boatyard messing about in boats!!
